Sometimes I find that this method may not work out too well for all. As it may be difficult to release the cookie dough out of the mold.

Sprinkling a little bit of flour into the mold prior to using it may help release the cookie better. Or laying a piece of plastic wrap into the mold prior to packing it with the cookie dough and the filling may help too. But my preferred method is to make the cookie by hand and then pressing it gently into the mold to create the pattern. It is not traditional to use the mold this way, but it works better and speeds up the process. Cover this with plastic wrap and place in the refrigerator to chill for 50 minutes. In a bowl , combine the date paste , cinnamon and cardamom. Once pressed in, you bang the mold on the table and out pops the shaped maamoul ready for baking. Place the finished cookies on a baking sheet.

This recipe is for date maamoul which is my favorite, but there are other types of fillings as well. You can fill it also with chopped nuts. Walnut or pistachios are among the other most popular types along with dates. Each filling has its own distinctive shape thanks to the molds that make for easy differentiation.

To get the authentic look of a Maamoul cookie , I recommend using a traditional mold. If you have a Middle Eastern speciality store near you, that would be my first stop. The traditional molds are made from wood and carved with a different design depending on the type of maamoul it is.
